One day I was asked on Facebook to tell how I make mayonnaise. It's quite simple. You put an egg, a clove of garlic, pinch of salt and 200 ml of olive or sunflower oil if you want a milder blend, or mixture of both in a measuring cup and blend it. When all of this is blended into mayonnaise you add the juice of half a lemon and continue to blend. The result is... mmmm! medicine for the body and soul!
The other day I made my first mayonnaise without egg. I simply substituted egg with a little soy milk. I used sunflower, but also a bit of olive oil. It's a mayonnaise without animal products that already has a name: "veganesa".
The result was fabulous. It was so good that the it was indistinguishable from the one I always make with egg.
The question is, "Why would someone want to make mayonnaise without egg?"

I have thought of a number of reasons:
1- Because you don't have one in the moment.
2- Because you're afraid of eating raw egg due to the risk of the presence of salmonella.
3- Someone in your house is allergic to eggs.
4- Because you don't want to be an accomplice in the abuse of chickens who are treated like egg-laying machines.
3- Because of the deeper reasons that led you to become vegetarian you have decided to eliminate from your food any animal products.
